I had been searching for a winter vegetable soup recipe for a while and finally stumbled upon this one on the internet. Instantly, I knew this was exactly what I wanted. I made a few modifications to the recipe, got to work, and about two hours later I was ready to feast on one of the healthiest dishes I’ve ever made. The soup was warm, hearty, and super comforting on a freezing cold winter day. Added bonus: the roasted veggies made my kitchen smell amazing! This soup is absolutely delicious. Who knew I would be such a fan of something that was both meat AND dairy free?! 😉

Carrots, butternut squash, tomatoes, onions, and garlic are about to hit the oven

Drizzle with olive oil and sprinkle salt & pepper

Add the roasted tomatoes, garlic and onion to a blender or food processor

Pureed in a matter of seconds with my new Nutri Bullet. Smells so good!

Add the broth, puree, thyme, and bay leaves to a large pot

Then throw in the kale and cook until tender

The roasted carrots and squash are ready to be added
