Jacques Pepin’s Beef Stew (Home Cookin’)

Chef Jacques Pepin is a god. His beef stew is my new favorite dish to make at home! It’s warm, cozy, and hearty. ¬†Perfect for a cold winter day (or any day, really). I would eat this in the middle of the summer, it’s so darn good! A big part of why I love it is the sauce: a full bottle of red wine. That’s it. So simple! It really adds such a beautiful richness to the dish. Throw in some nice carrots, mushrooms, cipollini onions, and pancetta, and you’ve got yourself a wonderfully satisfying meal.
