Blue Hill at Stone Barns (Pocantico Hills, NY)

What an extraordinary dining experience at Blue Hill at Stone Barns! I first learned about this incredible restaurant and farm while watching an episode of Avec Eric with Chef Eric Ripert (Season 1, Episode 6: Traditions). Chef Ripert went up to Stone Barns to hang out with Chef Dan Barber, Executive Chef and Co-Owner, and to learn about the farm and restaurant. I have had Blue Hill on my must try list for years — it’s just so hard to get a reservation. Luckily, we finally snagged one on a Saturday night. Three fabulous family members and I enjoyed an interactive twelve course tasting that included some of the freshest food I’ve ever had. Most of the courses consisted of vegetables — something that typically would not interest me (I’m a hardcore carnivore). I have to say that this meal made me see vegetables in a new light. Every single one (tomato, radish, pea shoot, eggplant, green beans, etc) was incredibly fresh and bursting with intense flavor. I was amazed! I would eat veggies more often if they could all taste like this. A few courses in, we were asked to gather our things and take a walk down the hall to a little barn (that we learned was a restored manure shed :)). It was beautifully set up for our next course and had a great view of the farm. What a treat! We then returned to our original table for the second half of the meal. The dishes that I enjoyed the most were the roasted eggplant, fresh housemade ricotta, the pasta-less carbonara, Berkshire pork, and the butter selection. Talk about mind-blowing! The three butters (one of which was whipped lardo) were insanely delicious. I swear, I was about to scrape the leftovers into my purse with a few slices of bread, it was so intoxicating! At the end of our meal, we were again asked to leave the table for the final course and take a seat on the outdoor patio. The desserts were served to us under a gorgeous starlit sky. It doesn’t get any more perfect than that! Many thanks to the outstanding waitstaff who were as friendly and helpful as can be, especially our main server, John. The experience from start to finish was unforgettable. I can’t wait to come back in the spring!
