American Fish (Las Vegas, NV)

At American Fish in the Aria hotel, I had one of the best seafood meals of my life. A few days before our reservation, I tweeted Chef Michael Mina and asked him which dishes I absolutely had to try. He kindly shared a few of his favorites, which I made sure to get — plus many more. We had a great view of the gorgeous dining room as well as the open kitchen from where we sat. I loved the warm cornbread muffins in the bread basket — so yummy! Then came dish after delicious dish: lobster rolls, smoked salmon with potato croquettes, seared scallops with foie gras, Chef Michael’s tomato soup & lobster grilled cheese, etc. For our entrees, several of us (including myself) ordered the mustard-marinated black cod — one of the restaurant’s signature dishes. It was buttery, flaky, tender, and just perfect, really. The birthday boy ordered the lobster pot pie, another signature dish. Our server presented it to the table and then proceeded to remove the top of the pie crust, plate each component, and finally, pour the lobster cream sauce over it all. Such a rich, decadent, truly scrumptious dish — I’ve never had anything like it. At that point, everyone was about to burst from all of the delicious food, but we had to make room for dessert (five of them!) — white chocolate bread pudding, mascarpone cheesecake, warm beignets, Valrhona chocolate custard, and a special dessert for the birthday boy. What an incredible seafood feast! I’m a big fan of Chef Michael Mina and I just have to thank him for such an amazing meal. I know it probably won’t happen, but I am still hoping that one day he’ll open a restaurant on the East Coast! :)
