Spaghetti alla Carbonara (Home Cookin’)

Spaghetti alla Carbonara is a quick and easy pasta dish that can be made in about 20 minutes. There is no cream required for the sauce — just eggs, parmesan, and pasta water. It’s nice and light with a sprinkling of crispy pancetta and parmesan cheese on top. Big thanks to Dave and his lovely Italian wife for sharing this recipe with me!

Frying up the pancetta

Al dente spaghetti goes straight into the pan where the pancetta was fried (the heat should be turned off)

Adding about a half cup of the pasta water to the sauce

Make sure the spaghetti is coated really well

Top it off with some parmesan cheese and freshly ground black pepper
