I have been really eager to try Acme, which opened in early 2012, because I am a fan of Scandinavian cuisine and looked forward to experiencing the cooking of its executive chef, Mads Refslund (one of the founders of Noma in Copenhagen). Acme did not disappoint with fresh, clean flavors and deliciously light seafood. The arctic char was a perfect medium rare, and the pear and radish added great crunch and crispness to the raw mackerel. Props to the bartender for creating an amazing cocktail called the Upstate Affair (with vodka, green apple, celery juice, and cinnamon).
