I love eating pot roast in the winter. It’s so cozy and comforting, like a warm blanket of meaty goodness. I found a couple of different recipes on the internet that I pulled inspiration from and modified to my liking. Please see my recipe below, which I was able to post thanks to Cucumbertown, a fantastic recipe-sharing website (www.cucumbertown.com).
The beautifully marbled boneless chuck roast from Whole Foods (sliced in half)
Seared roast and beef short ribs
Cooking the onions and carrots for just a few minutes
All of the ingredients in the pot and ready for the oven
The finished product: pot roast with white rice
The meat was falling apart — it was so tender!
